Ingredients

  • 3   fresh Anaheim or poblano chiles
  • 1 teaspoon  extra-virgin olive oil
  • 3/4 teaspoon  kosher salt; more to taste
  •   Freshly ground black pepper
  • 1/4 pound  bacon (about 4 slices), cut crosswise into thin strips
  • 1   yellow onion, cut into 1/2-inch dice
  • 2 large  cloves garlic, minced
  • 1 tablespoon  ground cumin
  • 1 cup  lager-style beer, such as Budweiser
  • 2 cups  low-salt chicken broth
  • 1-1/4 pound  Yukon gold potatoes, peeled and cut into 3/4-inch dice
  • 1/2 cup  chopped fresh cilantro
  • 3 tablespoons  chopped fresh oregano
  • 1   bay leaf
  • 2-1/2 cups  medium-diced leftover Roasted Pork Loin with Maple-Mustard Crust, (about 3/4 pound)
  • 2 teaspoons  cider vinegar; more to taste
  • 1/2 cup  crumbled queso fresco or feta cheese

Description
