  • 2 tablespoons  sherry vinegar
  • 1 tablespoon  fresh orange juice
  • 1 teaspoon  minced garlic
  • 3/4 teaspoon  salt
  • 1/4 teaspoon  freshly ground pepper
  • 3 tablespoons  freshly grated Parmesan cheese
  • 1 large head (1-3/4 pounds)  Romaine lettuce
  • 1 medium head (1-1/4 pounds.)  iceberg lettuce
  • 1 large (8 ounces) head  radicchio
  • 1/2 pound  jicama, peeled and cut into thin strips (2 cups)
