Creole Catfish Cakes

Ingredients

  • 1 pound  catfish fillets
  • 3 tablespoons  butter
  • 1/3 cup  all-purpose flour
  • 1 1/4 cups  milk
  • 1 teaspoon  Old Bay® seasoning
  • 1/2 teaspoon  salt
  • 1/2 teaspoon  ground black pepper
  • 1/2 teaspoon  dry mustard
  • 1/4 teaspoon  garlic powder
  • 1 1/2 cups  fresh bread crumbs plus more for coating cakes
  • 1 cup  finely chopped green bell pepper
  • 1/2 cup  finely chopped green onion
  • 1 tablespoon  fresh lemon juice
  • 1/2 teaspoon  hot pepper sauce
  •   Vegetable oil and butter for frying

Description

Place Catfish Fillets In A Single Layer In A Large Saucepan Or Dutch Oven And Add Just Enough Water To Cover. Bring To A Simmer Over Low Heat. Cover And Cook For 3 To 4 Minutes. Remove From Heat And Let Cool In Stock.
