- 1/2 of a medium jicama, peeled and cut into julienne strips (1 cup)
- 1 medium red and/or green sweet pepper, cut into thin strips
- 1 green onion, sliced (2 tablespoons)
- 2 cups shredded spinach or Chinese cabbage
- 2 cups hot cooked rice
