Stir-fried Pork And Jicama

Ingredients

  • 1 pound  lean boneless pork
  • 1/2 cup  cold water
  • 1/4 cup  dry sherry
  • 1/4 cup  soy sauce
  • 4 teaspoons  cornstarch
  • 1 tablespoon  cooking oil
  • 1 teaspoon  grated fresh ginger
  • 1   clove garlic, minced
  • 1/2 of a medium  jicama, peeled and cut into julienne strips (1 cup)
  • 1 medium  red and/or green sweet pepper, cut into thin strips
  • 1   green onion, sliced (2 tablespoons)
  • 2 cups  shredded spinach or Chinese cabbage
  • 2 cups  hot cooked rice

Description

Though Jicama (HE-kuh-muh) Is A Mexican Vegetable, It Adds Some Crispness To This Chinese-inspired Dish.
