Mediterranean Tostadas

Ingredients

  • 1 tablespoon  olive oil
  • 1 teaspoon  lemon juice
  • 1/4 teaspoon  paprika
  • Dash  salt
  • Dash  freshly ground black pepper
  • 4 medium  skinless, boneless chicken breast halves
  • 2 6-inch  whole wheat pita bread rounds, split and toasted
  • 1 recipe  Hummus (see recipe, below)
  • 3/4 cup  coarsely chopped tomato
  • 1/2 cup  chopped cucumber
  •   Fresh cilantro (optional)
  •   Plain fat-free yogurt (optional)

Description
