  • 1/2 cup  fine cornmeal, or polenta (see Note)
  • 1 teaspoon  baking powder
  • 1/4 teaspoon  salt
  • 3   large eggs
  • 2 tablespoons  mild-flavored olive oil, or canola oil
  • 1 teaspoon  vanilla extract
