Chicken Caprese

Ingredients

  • 3   large ripe plum tomatoes (about 3/4 pound), cored, seeds squeezed out, and diced
  • 6 ounces  fresh mozzarella, cut into small cubes
  • 5 tablespoons  extra-virgin olive oil
  • 1 tablespoon  balsamic vinegar
  • 1/2 teaspoon  salt
  • 1/4 teaspoon  black pepper
  • 3 tablespoons  chopped fresh basil
  • 1/2 cup  all-purpose flour
  • 2   eggs
  • 1/2 cup  bread crumbs
  • 4   boneless, skinless chicken breast halves (about 1-1/2 pounds total)
  •   Additional basil for garnish, optional
