- 1 medium cucumber, peeled, seeded and finely chopped
- 1 stalk celery, finely chopped
- 1/2 small red onion, finely chopped
- 2 tablespoons minced fresh chives
- 2 tablespoons white-wine vinegar
- 2 tablespoons lemon juice
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon freshly ground pepper
- 1/4 teaspoon salt
- Several dashes hot sauce, to taste
- 1 pound raw shrimp, (21-25 per pound; see Note), peeled and deveined
- 2 cloves garlic, minced
- 2 tablespoons minced fresh thyme
