- 2 1/2-3 pounds Russet potatoes, peeled and chunked

- 1 cup sour cream
- 1/4-1/2 cup half-and-half or heavy cream
- Coarse black pepper
- 3-4 tablespoons horseradish, to taste
- 1/4-1/3 cup chives, chopped
- 4 tablespoons butter

- 3 cups beef stock
- 3 tablespoons Worcestershire sauce

- 1 egg yolk, lightly beaten
