- 1 package fresh spinach, rinsed well
- 2 tbsp. butter
- 2 cups shredded cooked chicken
- 1 small can chopped green chili peppers
- 2-3 teaspoons of cumin
- 1 teaspoon lime juice
- 1-2 dashes cayenne pepper
- fresh ground pepper to taste
- 2 cups shredded cheddar cheese
- 3 tbsp. butter
- 1/4 cup flour
- 1 teaspoon ground coriander
- 2 1/2 cups chicken broth
- 1 cup sour cream
- 12 6 inch tortillas
- 1-2 tbsp. freshly chopped cilantro (optional)

I Was In The Mood For Enchiladas Last Evening. I Am Also Trying To Incorporate More Leafy Greens Into Our Diet. I Took Out My Old Trusty Better Homes And Garden Cook Book And Used Their Chicken Enchilada Casserole As A Base Recipe. I Tweaked It To Include
