  • 12 black peppercorns
  • Fresh rosemary
  • juniper berries
  • The Sauce
  • 1 tbs butter
  • 1 tbs plain flour
  • 1 tbs rownaberry jelly
  • 5 fl oz / 150 ml port.
  • Christmas rowan berry jelly
  • FOR 4 SMALL JARS
  • INGREDIENTS
  • 900g rowan berries
  • 900g Bramley apples, peeled, cored and chopped
  • Zest and juice of 1 lemon
  • 6 cloves
  • 1 cinnamon stick
  • 6 allspice berries
  • caster sugar

I Love Venison. Though I Have Heard That Juniper Berries Are Disgusting. I Thought I Would Try It One Christmas With Quails, But They Disappeared.
