  • 2 medium yellow onions, thinly sliced

  • 8 juniper berries
  • 1 cinnamon stick
  • 1 bay leaf
  • 3 pounds red cabbage (about 1 large or 2 small heads), cored and shredded
  • 1 granny smith apple, cored and diced
  • 1 1/2 cups red wine
  • 1 1/2 cups water
  • 1/2 cup red wine vinegar
  • 1 tablespoon sugar
  • 4 teaspoons kosher salt
  • Freshly ground black pepper
