- 2 x red cabbage, cored, chiffonade
- 4 x onion, peeled, thinly, sliced
- 5 x Granny Smith apples, peeled, cored, and, roughly, diced
- 4 x garlic, cloves, finely, minced
- 1/2 c. lemon juice
- 1 c. apple, juice
- 1 c. white wine
- 2 tsp freshly grnd cinnamon
- 1 tsp nutmeg, freshly, grnd
- 10 x juniper berries, crushed
- 5 x allspice, crushed
- 2 whl Bay Leaf
- 1 bn fresh thyme
