Braised Red Cabbage Recipe

Ingredients

  • 5 Tbsp. duck fat
  • 1/2 lb double smoked bacon, cut into thin strips
  • 2 x red cabbage, cored, chiffonade
  • 4 x onion, peeled, thinly, sliced
  • 5 x Granny Smith apples, peeled, cored, and, roughly, diced
  • 4 x garlic, cloves, finely, minced
  • 1/2 c. lemon juice
  • 1 c. apple, juice
  • 1 c. white wine
  • 2 tsp freshly grnd cinnamon
  • 1 tsp nutmeg, freshly, grnd
  • 10 x juniper berries, crushed
  • 5 x allspice, crushed
  • 2 whl Bay Leaf
  • 1 bn fresh thyme
