Beer, Onion And Carrot Soup Recipe

Ingredients

  • 1/2 cup shredded sharp cheddar cheese
  • 4 tbs butter
  • 2 tbs flour
  • French bread, sliced into small pieces
  • 1 12oz bottle of good brown ale
  • 3 cups beef stock
  • 1 large carrot, shredded
  • 2 large onions, thinly sliced
  • 2 garlic cloves, minced
  • 1 tbs honey
  • 1/4 cup sherry
  • worcestershire sauce, to taste (I use a couple splashes)
  • salt and black pepper, to taste
  • hot sauce of your choice, to taste
  • 1/4 cup heavy cream, if needed/desired.

Description

You Could Ladle This Into Individual Crocks, Top With Cheese And Broil Like You Would With French Onion Soup, But I Prefer To Melt Some Cheese On Small Pieces Of Toasted Bread, Sort Of Like Croutons.
