- 1 1/2 tbsp olive oil
- 1 small onion, finely sliced into rings
- 2 chorizo sausages, sliced into thick rings
- 1 garlic clove, squashed
- 1 red capsicum (bell pepper), quartered and sliced
- 1/2 tsp Spanish paprika
- 1 bay leaf
- 3 thyme sprigs
- 1/2 tbsp oregano leaves, chopped finely
- 250 grams (9 oz) small potatoes, peeled and quartered
- 200 grams (7 oz) ripe tomatoes, diced
- 500 ml (1 pint) chicken stock
- 100 grams (3.5 oz) silver beet (finely sliced)
- sea salt and cracked pepper to taste
- 2 tbsp flat leaf parsley, finely chopped
