- 1 generous cup washed and shredded spinach
- 1 leek, halved vertically and sliced
- 2 stalks spring garlic or 1 mature garlic clove, chopped
- 10 grape tomatoes, quartered
- 2 eggs
- 2 tbs pine nuts, toasted
- 1/2 cup semi-firm goat cheese or cheese of your choice, grated
- 2 tbs olive oil
- salt
- pepper
- pesto for serving (optional)
