Kale And Cabbage Gratin

Ingredients

    2 tablespoons of olive oil
    1 onion, finely diced
    4 cloves of garlic
    6 leaves of fresh sage, minced
    1 teaspoon fresh thyme, chopped, or ¼ teaspoon dried
    1 pound of kale, stems removed, and cut into ribbons, still wet from washing water
    ½ teaspoon of salt
    1 pound of green cabbage, trimmed, cored, and cut into thin ribbons
    ½ cup of water
    salt and freshly ground pepper, to taste
    2 eggs
    ½ cup cooked quinoa (or brown rice, or other cooked whole grain of your choice)
    4 ounces goat cheese, crumbled

    For the topping:

    1 tablespoon olive oil
    2 cloves of garlic, pressed or minced
    ½ cup fresh bread crumbs
    ¼ teaspoon dried thyme
