Ingredients
- 1 bag red beans (dry) You can use kidney beans but I prefer just red beans or pink beans. The flavor is lighter. [canned will work as well and time will be minuscule in comparison.]
- Enough water for the beans. See package instructions
- Cook on stove or slow cooker or a pressure cooker. Any means will work.
- Make enough rice for your family or company. I've used brown rice and white rice. It's up to you.
- 1 onion
- 1 bell pepper
- 1 tbsp liquid smoke
- I like ground spices best. No stems or hard pieces that way!
- a few bay leaves to taste
- oregano to taste
- basil to taste
- summer savory to taste
- thyme very small amount
- cayenne or other hot pepper flavor you appreciate to taste. Some like it hot!
- You may use any green spices you like with beans. I'd avoid cumin and chili powder until after you've tried this. You may add them but it will alter the flavor of the beans.
- salt and pepper to taste
