Ingredients
- 3 lbs boneless chuck steak, 2 inches thick, patted dry
- 1/4 cup all-purpose flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 3 Tbl vegetable oil
- ! medium sized yellow onion, thickly sliced
- 1 medium sized stalk of celery, thickly sliced
- 2 medium sized green bell peppers, cored. seeded, and sliced
- 2 cloves garlic, minced
- 1 and 1/2 cups beef stock or beef broth
- 1 (8 oz) can tomato sauce
- 1 tsp brown sugar
- 1/2 tsp dried basil
- 1/2 tsp thyme
- 1/2 tsp oregano
- 1 bay leaf
- 1/8 tsp ground cayenne pepper
- For the grits:
- 3 cups water
- 1/4 tsp salt
- 1 cup hominy grits
- 1 Tbl butter or margarine
- 1 cup shredded cheddar cheese
- 1 large egg, lightly beaten
- 1/4 tsp paprika
