Lasagna of Exotic Mushrooms

Ingredients

  • 2 tablespoons olive oil
  • 1 cup minced yellow onions
  • Salt and freshly ground black pepper to taste
  • 2 ounces sliced prosciutto, finely chopped
  • 1/2 cup finely chopped fresh parsley leaves
  • 2 tablespoons minced shallots
  • 2 tablespoons minced garlic
  • 1 pound assorted wild and exotic mushrooms, such as chanterelles, oysters, shiitakes, and lobster mushrooms, wiped clean and coarsely chopped (about 5 cups)
  • 2/3 cup dry white wine
  • 2 pounds canned crushed tomatoes, undrained
  • 2 tablespoons thinly sliced fresh basil leaves
  • 1 tablespoon chopped fresh oregano leaves
  • 2 cups fresh ricotta cheese
  • 1 large egg
  • 2 cups freshly grated Parmigiano-Reggiano cheese, plus more for garnish
  • 2 cups grated fresh mozzarella cheese
  • 1 cup heavy cream
  • 2 pounds assorted potatoes, such as Idaho, red, and sweet, peeled and thinly sliced
