1 1/2 cups diced smoked turkey 1 fennel bulb, trimmed and cut into 1/2-inch dice 3/4 cup broken walnut pieces, lightly toasted 1/2 cup dried cranberries 1/3 cup Stonewall Kitchen Apple Cranberry Chutney 4 to 5 tablespoons fresh lemon or orange juice  4 tablespoons olive oil 1 tablespoon minced flat-leaf parsley salt and freshly ground black pepper to taste lettuce leaves
