Salmon Burgers With Dill And Capers Recipe

Ingredients

  • 450 gm Skinned salmon fillet, very finely diced (about 3mm/ 1/4" cubes)
  • 2 Tbsp. Minced dill, fennel or possibly chives (2 To 3)
  • 45 gm Shallot, grated or possibly very finely minced
  • 1 Tbsp. Small capers, roughly minced, up to /2 - 2
  • 1 1/2 Tbsp. Mayonnaise
  •     A good squeeze of lemon juice
  •     Salt and pepper
  • 4 x Ciabatta rolls, or possibly other good quality rolls, halved
  •     Mango chutney
  • 2 x Crisp lettuce leaves, finely shredded (2 To 3)
  • 2 x Tomatoes, sliced
  •     Lemon wedges
  •     Mayonnaise
