- 450 gm Skinned salmon fillet, very finely diced (about 3mm/ 1/4" cubes)
- 2 Tbsp. Minced dill, fennel or possibly chives (2 To 3)
- 45 gm Shallot, grated or possibly very finely minced
- 1 Tbsp. Small capers, roughly minced, up to /2 - 2
- 1Â 1/2 Tbsp. Mayonnaise
- Â Â A good squeeze of lemon juice
- Â Â Salt and pepper
- 4 x Ciabatta rolls, or possibly other good quality rolls, halved
- Â Â Mango chutney
- 2 x Crisp lettuce leaves, finely shredded (2 To 3)
- 2 x Tomatoes, sliced
- Â Â Lemon wedges
- Â Â Mayonnaise
