Carrot And Almond Cake

Ingredients

  • 250g carrots, finely grated
  • 2 tablespoons brandy
  • 5 eggs
  • 200g dark brown soft sugar
  • 1 pinch of salt
  • 60g flour
  • 5 teaspoons baking powder
  • 30g almonds, peeled and ground
  • butter for greasing
  • 4 tablespoons breadcrumbs
  • Icing:
  • 200g icing sugar
  • 3 tablespoons rum
  • 3 tablespoons lemon juice
  • For decoration:
  • 12 small marzipan carrots

This Is Not The Same As Other Carrot Cake Recipes. It Contains Little Flour And Instead Ground Almonds For A Wonderful Texture. A Touch Of Brandy Adds Beautiful, Refined Flavour. Easy To Make, As Well!
