- 2 teaspoons salt

- 2 tablespoons canola oil
Coconut Shrimp Balls
- 1 coconut or 1 cup, shredded dried coconut
- 1/2 pound shelled and de-veined 30/40 count shrimp
- 1 tablespoon store-bought green curry paste (available in the Asian section of most grocery stores)
- 2 green onions, trimmed and sliced finely
- 1 egg white
- Peanut oil for frying
Sesame Chicken Balls
- 3 boneless, skinless chicken thighs, cut roughly into 1-inch pieces
- 1 tablespoon freshly grated ginger
- 2 cloves garlic, minced
- 2 green onions, trimmed and sliced finely
- Approx. 4-6 cilantro leaves, diced finely
- 2 tablespoons panko, or bread crumbs
- 1 egg white
- 1 teaspoon soy sauce
- 1 tablespoon canola oil
- 2 tablespoons toasted sesame oil
- 1/2 cup toasted sesame seeds
Potatoes
- 2 russet potatoes
- 2 tablespoons olive oil
