  • 3 tablespoons olive oil
  • 1 tablespoon butter
  • 1/4 cup leeks, medium dice
  • 1 small onion, medium dice
  • 2 garlic cloves, finely chopped
  • 3 celery stalks, medium dice
  • 1/4 cup carrots, medium dice
  • 1/2 cup potatoes, medium dice
  • 1/2 cup button mushrooms, quartered
  • 1 cup white wine
  • 1/4 cup all purpose flour
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped chives
  • 3 cups fish stock
  • 1 cup heavy cream
  • 1 pound rockfish, skinned and 1 inch cubes
  • 2 dozen oysters, shucked
  • 1 lemon, juiced
  • 6 puff pastry rounds-chilled (1/8 inch thick and 4” round)
  • 1 egg, beaten
