- 550g yellow patty pan squash, halved
- 6 (600g) small Lebanese zucchini, halved lengthways
- 6 each small green and yellow zucchini, halved lengthways
- 1 tbs olive oil
- 4 chicken breast fillets
- 40g parmesan, flaked
- Polenta wedges (see box, right), to serve
Salsa verde
- 2 tbs capers, finely chopped
- 4 anchovy fillets, finely chopped
- 1 clove garlic, crushed
- 1 tsp Maille Dijon mustard
- 1 tsp red wine vinegar
- 1/2 cup (125ml) extra virgin olive oil
- 1/2 bunch flat-leaf parsley, leaves finely chopped
- 1/2 bunch mint, leaves finely chopped
