Patty pan squash, zucchini and chicken with salsa verde

Ingredients

  • 550g yellow patty pan squash, halved
  • 6 (600g) small Lebanese zucchini, halved lengthways
  • 6 each small green and yellow zucchini, halved lengthways
  • 1 tbs olive oil
  • 4 chicken breast fillets
  • 40g parmesan, flaked
  • Polenta wedges (see box, right), to serve
  • Salsa verde

  • 2 tbs capers, finely chopped
  • 4 anchovy fillets, finely chopped
  • 1 clove garlic, crushed
  • 1 tsp Maille Dijon mustard
  • 1 tsp red wine vinegar
  • 1/2 cup (125ml) extra virgin olive oil
  • 1/2 bunch flat-leaf parsley, leaves finely chopped
  • 1/2 bunch mint, leaves finely chopped
