Veggie Cobbler

Ingredients

    Filling: (Boil in water for 4 minutes)
    2 medium baking potatoes, peeled and diced
    1 1/2 cups peeled and sliced carrots
    1 1/2 cups frozen peas
    1 1/2 cups broccoli florets
    1 1/2 cups frozen corn kernels
    Saute:
    3 1/2 Tbsp butter
    1 large onion, diced
    2 cups sliced mushrooms
    1 cup zucchini, diced
    Add to sauted veggies & simmer and stir until thick:
    3 Tbsp flour
    2 tsp chicken bouillon dissolved in 1 1/4 cups hot water
    1 cup milk
    1/2 tsp salt
    1/4 tsp pepper
    1/4 tsp thyme
    1/3 cup grated parmesan cheese
    Topping:
    3/4 cup yellow corn meal
    1 Tbsp baking powder
    1 1/2 tsp sugar
    1/2 tsp salt
    1/2 cup milk
    1 egg
    1 Tbsp oil
