Ingredients
- 1 medium onion, chopped
2 cloves garlic, minced
1 1/2 T olive oil, for sauteeing
1 boneless, skinless chicken breast (probably about a pound)
14 oz. can diced tomatoes
1 can mild rotel (if you like less spice, use only 5 oz., which is what the original recipe calls for, only they use the regular rotel, not the mild)
14.5 oz beef broth (I use 2 cups water and 2 t. Better than Bouillon Organic Beef base)
14.5 oz chicken broth (I use 2 cups water and 2 t. Better than Bouillon Organic chicken base)
One can tomato soup
1 1/2 cans water
1 t. ground cumin
1 t. chili powder
2 t. Worcestershire sauce
1/2 t. Tabasco (I leave this out since my kids don't like spice, but I calculated it in the calories and such)
The original recipe also calls for 1/2 t. lemon pepper seasoning, which I've omitted--it tastes fine without it, and I already have too many spices in my cabinet!
Optional (not calculated in nutrition, so add these to your totals): Tortilla chips, grated cheese, fresh diced tomatoes, diced avocado, sour cream, cilantro; I like all these toppings, but for calories sake, I usually just use some tortilla chips, a little cheese, tomatoes, and cilantro.
