Farro Salad With Grilled Eggplant, Tomatoes And Onion

Ingredients

    1 1/2 Cup Farro
    3 Japanese eggplant, or 1- 1-1/2 cup egg plant
    1 small red onion,thickly sliced
    Olive oil for brushing
    salt & pepper
    1/2 cup Grape Tomatoes wased sliced in 1/2
    1/4 cup chopped fresh dill, optional
    Sherry Vinaigrette recipe
    1 small shallot, finely chopped
    1/4 cup Sherry vinegar or balsamic vinegar
    2 tsp Dijon mustard
    1/4 tsp kosher salt
    1/4 tsp ground pepper
    1/4 cup chooped fresh dill
    1/2 olive oil
    whisk together the shallot, vinegar, mustard, salt, pepper and dill in small bowl.
