Wonderful Vegan Borscht

Ingredients

    3-4 beets, any variety, red is my favorite for bright, beautiful borscht

    1 large onion

    3-4 medium/large carrots

    1 jar 365 Sauerkraut with liquid, any brand will work

    salt, pepper, and Spike seasoning, to taste

    a few drops tabasco, to taste

    3 bay leaves

    2-3 TBSP Bragg's Apple Cider Vinegar

    2 Tsp olive oil

    1 carton Imagine No-Chicken broth 16oz (vegetable broth will work)

    Water



Description

This Is A Great, Flavorful Borscht Like Your Babushka Would Have Made, Now Vegan. You Can Eat It Hot Or Cold, But I Always Prefer Hot Soup. Some Puree This Soup, But Everyone I Know Prefers It Chunky. Garnish With Slices Of Boiled Red Potato And Fresh
