Chickpea Broccoli Casserole

Ingredients

    3 (16 oz) cans of chickpeas, drained and rinsed ( or equivalent amount cooked chickpeas)

    1 large onion, quartered and thinly sliced

    3 large carrots, grated (about 2 cups)

    1 head of broccoli, cut into small florets (about 4 cups)

    1 tbsp thinly sliced chives

    1/2 cup bread crumbs (preferably whole wheat)

    3 tbsp olive oil

    1 cup vegetable broth

    1 tsp salt
