Ingredients

    1 tbsp coconut oil
    2 tbsp olive oil
    1 medium-sized yellow onion, chopped
    1 large carrot, chopped
    1 cup plus 2 tbsp flour
    1 large all-purpose potato, peeled and diced
    3 cups slow-cooked chickpeas (or canned), drained and rinsed
    1/2 cup frozen peas
    3/4 cup vegetable stock
    1 tbsp soy sauce (or Bragg's Liquid Amino Acids)
    1/2 tsp dried thyme
    1/2 tsp dried oregano
    salt and pepper, to taste
    2 tsp baking powder
    1/2 tsp baking soda
    1/2 cup almond milk (or soy, or regular)
