Merguez Couscous Recipe

Ingredients

  • 2 sm onions minced fine
  • 4 Tbsp. unsalted butter
  • 1 tsp turmeric
  • 1/2 tsp dry warm red pepper flakes
  • 4 tsp tomato paste
  • 3 c. chicken broth
  • 1 1/2 c. water
  • 1/2 lb merguez cut in half
  • 2 x carrots cut diagonally
  •     into 1/2" thick slices
  • 2 x turnips peeled, and cut
  •     into 1 1/2"-thick wedges
  • 1 x cinnamon stick - (2" to 3" long)
  • 1 x bay leaf
  • 1 c. canned chick-peas rinsed well,
  •     and liquid removed
  • 1 1/2 c. couscous
