Ingredients

  • 1/2 c. liquid removed oil-packed sun-dry tomato
  • 1/4 c. freshly grated parmesan cheese
  • 1/2 c. packed basil, leaves
  • 1 Tbsp. chopped garlic
  • 2 Tbsp. extra virgin extra virgin olive oil, plus more for brushing
  •     salt, and freshly cracked black pepper
  •     Grilled Vegetables
  •     extra virgin olive oil, for brushing
  • 2 med red bell pepper
  • 2 med zucchini, sliced lengthwise 1/4 inch thick
  • 1 sm eggplant, sliced crosswise 1/4 inch thick

  • 1 lrg baguette
  • 10 sm arugula, leaves, washed, spun dry
  • 8 slc smoked provolone cheese
  • 8 slc mortadella, grilled
