- 1/4 x Fresh lemon squeezed
- 1 x Green onion sliced finely
- 1 whl egg beaten
- 24 x Potsticker wrappers, (siu gow)
- 3 Tbsp. Extra virgin olive oil
- Â Â All of the shells and tails from the above shrimp
- 3 x Shallots peeled and sliced thinly
- 1 sm Leek sliced thinly
- 1 x Rib Celery sliced thinly
- 3 x Green onions
- 3 slc Fresh ginger root 1" dIameter and 1/4" thIck
- 1 c. Minced fresh tomato
- 1 c. White wine
- 1/2 c. Plum wine
- 2 c. Chicken stock
- 1 Tbsp. Black peppercorns
- Â Â All stems from the above basil and cilantro

- 1 c. Creme fraiche
- 1 Tbsp. Fresh wasabi grated, (or possibly frzn not powdered)
- 1/2 bn Fresh cilantro
- 2 lb Fresh swordfish filet cut Into 8 equal steaks
- 3 Tbsp. Extra virgin olive oil
- 1 Tbsp. Peanut oil
- 1/2 tsp Cracked black peppercorns
- 3 Tbsp. Sweet butter
