- 5 ribs Celery, chopped
- 6 large slices Ginger, fresh
- 1 head Garlic, split
- 4 stalks Lemongrass, smashed and chopped
- 1 bunch Cilantro, stems only
- 1 tsp. Black Peppercorns
- 4 qts. Chicken Stock, unsalted
- To taste Shoyu
- 1.5 # Udon Noodles, cooked (see note)
- 6 ea. Eggs, simmered for 13 minutes, shocked in ice water for 15 minutes and peeled.
- All reserved Chicken breast, sliced
- 1 bunch Scallion, chopped
- 1 bunch Cilantro Leaves, chopped
- To taste Sriracha Sauce
- To taste High Quality Sesame Oil
