Shellfish Tian With Wholemeal Toast

Ingredients

Ingredients For the tian
  • 120g/4½oz picked white crabmeat

  • 50g/2oz Southport brown shrimps (or similar), peeled

  • 35g/1½oz ready-made mayonnaise

  • ½ bunch chives, finely chopped

  • ¼ bunch chervil, finely chopped

  • pinch mild paprika

  • ¼ lemon, juice only

  • salt and freshly ground black pepper

To garnish
  • 1 hard-boiled egg, white and yolk separated and chopped

  • 40 small capers, cut in half

  • 5 baby gherkins (cornichons), cut into rounds

  • 1 shallot, finely chopped

  • large sprig parsley, chopped

For the guacamole
  • 1 avocado, peeled and diced

  • lime juice

  • 50g/2oz mascarpone

  • salt and freshly ground black pepper

To serve
  • 1 tbsp white wine vinegar

  • 5 tbsp olive oil

  • salt and freshly ground black pepper

  • small salad leaves

  • sliced wholemeal toast and butter
