Ingredients
- 2 cups dried navy beans
- 2 sprigs thyme, 1 stem parsley, top half of a stalk of celery, 2 bay leaves, tied in a bundle
- 3 whole garlic cloves, peeled
- 1 slice bacon
- Salt and black pepper, to taste
- 2 teaspoons grape seed oil, or other neutral oil with a high smoke point
- 10 small garlicky pork sausage links (Avoid Italian sausage and sausage with a lot of sage; I used Aberdeen Hill Farms breakfast sausage)
- 5 chicken drumsticks
- 1 large onion, chopped
- 2 carrots, or 1 small parsnip, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 1 teaspoon minced fresh thyme.
- About 3/4 cup white wine
- 1 cup chopped tomato
- 2 cups bread crumbs
- 1/2 stick unsalted butter, melted
- 2 tablespoons fresh parsley, finely chopped
