Slow-roasted Beef Tenderloin

Ingredients

  • 1 2-1/2- to 3-lb.  beef tenderloin
  • 2 Tbsp.  cooking oil
  • 1 to 2 cloves  garlic, minced
  • 1 tsp.  cracked black pepper
  • 1/2 tsp.  sea salt or kosher salt or 1/4 tsp. salt
  • 4 sprigs  fresh rosemary
  • 4 sprigs  fresh oregano
  • 4 sprigs  fresh thyme
  • 1 recipe  Mushroom Tumble or Horseradish Cream (see below)
  •   Fresh thyme sprigs

Description

Roasting Beef Over A Bed Of Herbs Infuses The Meat With Fragrance And Flavor. Serve With Mushroom Tumble And Spicy Horseradish Cream Sauce.
