  • 2 cups  coarsely chopped escarole or spinach
  • 3/4 cup  reduced-sodium chicken broth
  • 1/4 cup  dry white wine or reduced-sodium chicken broth
  • 2 tablespoons  snipped fresh thyme or 1 teaspoon dried thyme, crushed
  • 1/4 cup  finely shredded Parmesan cheese (optional)
