2 chicken quarters (these are leg/thighs)

3 ounces shitake mushrooms
3 ounces oyster mushrooms
6 ounces baby bella mushrooms
(you can, of course, substitute any combination of mushrooms â these looked nicest at Whole Foods)
fresh, garden cut chives
8 ramps (a.k.a. tender baby leeks)
Parmigiano-Reggiano
(the following items are not pictured, but more or less came from my pantry)
heavy cream
white wine
fresh chopped parsley
fennel salt
sea salt
cracked black pepper
cayenne pepper
paprika
