  • 1 large onion, cut into 4 wedges, sliced
  • 1/2 cup chopped celery
  • 1 cup chopped sweet bell pepper, red and green
  • 2 garlic cloves, minced

  • 2 tablespoons flour
  • 1 1/4 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried leaf basil
  • 1/2 teaspoon crushed red pepper
  • Tabasco or other hot pepper sauce
  • salt and freshly ground black pepper
  • 2 tablespoons chopped fresh parsley
  • 4 to 5 cups hot cooked grits
