  • 3 tablespoons extra virgin olive oil

Pommes Sarladaise

  • 1 1/2 pounds mini yellow potatoes
  • 3 tablespoons duck fat
  • 2 cloves garlic, finely chopped
  • 2 tablespoons parsley, finely chopped
  • salt
  • pepper

Fillet of Beef

  • 3 tablespoons vegetable oil
  • 4x8 ounce portions of beef tenderloin, room temperature
  • salt
  • pepper

Black Peppercorn Sauce

  • 1 cup veal stock
  • 2 tablespoons 35% cream
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon kosher salt
