Ingredients

  • 500 g fresh whitebait, rinsed and drained, or frozen whitebait, defrosted
  • About 4 cups vegetable oil, for deep-frying
  • 3 tablespoons plain flour
  • 2 tablespoons hot curry powder
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon salt
  • Parsley sprigs, to garnish
  • 2 lemons, cut into 8 wedges, to serve
