Ingredients

  • 1 lb. cooked corned beef, diced in 1/4-in. pieces
  • 1 lg. head of cabbage, steamed with leaves removed (about 12-15 leaves)
  • 1 lb. of carrots, diced in 1/4-in. pieces
  • 4 lg. potatoes, diced in 1/4-in. pieces
  • cooking spray
  • 2 Tbs. canola oil
  • salt and pepper
  • one 8-oz. container low-fat sour cream
  • 4 Tbs. horseradish
  • 1/2 tsp. dry dill
