  • 1 (396g) firm tofu, diced
  • 3 cooked salted duck eggs, shell removed
  • 1 tablespoon water
  • 1 tablespoon oil
  • 1 tablespoon finely chopped garlic
  • 2-3 aubergine, cut into chunks
  • water, as needed
  • 1 tablespoon oil
  • 1/2 tablespoon oil
  • 1 teaspoon fish sauce
  • Sauce:
  • 1 teaspoon dark soy sauce
  • 200ml chicken stock
  • 200ml water
  • 1 tablespoon cornflour, mixed with 1 tablespoon water
  • 1 spring onion, chopped
