Ingredients

  • 2 bunches cardoons, 3 to 4 large stalks on each
  • 3 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 3/4 cups milk
  • 1/2 teaspoon salt
  • A pinch of nutmeg
  • 2 teaspoons plus 1 tablespoon extra-virgin olive oil
  • 1/4 cup homemade, coarse, dried breadcrumbs
  • A handful of fresh parsley leaves
  • 1/2 cup freshly grated Parmigiano Reggiano or Grana Padano
  • 1/4 to 1/2 teaspoon dried red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
