Buckwheat Noodle Salad

Ingredients

    Salad Dressing:
    ½ mango chopped
    ½ teaspoon chopped ginger
    2oz low sodium soy sauce
    Blend in blender till smooth.
    Salad:
    4oz buckwheat noodles cooked till soft like spaghetti, but not too soft.
    ½ mango sliced thin
    ¼ cup canned bean sprouts (if you can find fresh, it would add a bit better texture)
    2 Tablespoon sliced Scallion tops (green part only)
    ½ red pepper julienne
    2 Tablespoons rough chop cilantro Leaf

Description

If You Don’t Like, Or You Don’t Have:Scallion- Use OnionBuckwheat Noodles- Use Angel Hair Pasta, Or Even Rice.Mango- Use Tomato Or Papaya
