Bill Grainger's Citrus Risotto With Chilli Garlic Prawns

Ingredients

  • 6 cups (1.5 litres) chicken stock
  • 1tb olive oil
  • 1 small onion finely diced
  • 1tsp sea salt
  • 50g butter
  • 1 ½ cups (330g) Arborio rice
  • finely grated zest of 1 lemon
  • 1tb lemon juice
  • freshly ground black pepper
  • 2 small red chillies
  • 2 garlic cloves
  • 2 extra tbsp olive oil
  • 20 raw prawns, shelled and de-veined but with tails intact
  • ¼ cup roughly chopped parsley
