Ingredients

For the pastry

  • 250g Plain Flour
  • 100g Chilled Butter
  • 100g Caster Sugar
  • 2 Beaten Egg Yolks
  • 15-30ml Cold Water

For the Filling

  • 3 Eggs
  • 125gm Caster Sugar
  • 100ml Double Cream
  • Zest of 1 Lemon
  • 4TBLSP Lemon Juice (usually 1 lemon)

To Brulee:

  • Caster Sugar
